Spaghetti & Vegan Balls

This is a recipe I whipped up yesterday. Spaghetti and vegan balls! Amazing.

Ingredients

Balls:

  • 1 white onion
  • 1 garlic clove
  • About 30 button mushrooms
  • Tin of black beans
  • Herbs (I used oregano and Italian all spice)
  • Squeeze of lemon juice
  • 1 cup oats or bread crumbs

Pasta:

  • Pasta sauce
  • Spaghetti (I used gluten free rice & corn pasta)

Method

Step one: Dice onion, garlic and mushrooms. Cook in the fry pan along with black beans, herbs and lemon juice

Step two: Once cooked blend it in your food processor or blender (my blender doesn’t work with hot food so allow to cool a little)

Step three: Blend oats to make flour or if you’re using bread crumbs then no need to blend

Step four: Add some oat flour to the ball mix. If it’s too wet to form balls then add more. Save some oats for rolling.

Step five: Roll into balls then roll in oat flour to cover. Place onto baking tray. Bake for 20 minutes on 180c. Turning half way.

Step six: Whilst balls are in the oven prepare your spaghetti

Step seven: Heat sauce in fry pan. Add spaghetti & balls. Mix together until all combined then serve!
